Hi I'm Chef Sven!
I have a 5-year degree in Hotel Management & Culinary Arts from Germany. I was selected out of thousands of applicants for an 18-months trainee program at Frenchman's Creek Country Club in West Palm Beach, Florida.
After that I moved to Miami and became the executive pastry chef in the Delano Hotel in South Beach.
I moved to LA and started catering private house parties all around Beverly Hills and I have several private clients. I have been an executive chef at Kappa Kappa Gamma sorority at USC for the past 5 years. I also cook at RISE Malibu, which is a high-end rehab center.
I bake and cook. I'm a wedding cake maker at Burlap & Bordaux. I also do all their desserts, like mousses, macarons, creme brulees, fruit tarts and lemon bars, coffee cakes and pies, German Apple Strudel, ice-cream, cobblers, quiches
I work with yeast dough and make foccacia, baguette, cinnamon rolls
On the savory side I love making soups (because of my grandmother). I like working with meats, either short grilled or roasts as well as fish. I love a good char so grilling is fun; veggies or meats. A medium rare filet with grilled veggies and an amazing sauce is my favorite. No need for carbs, since I personally focus on the healthier side.
I cook rather higher end comfort food than fine dining. I am working on a fitness concept for my Instagram page to my personal focus is lean cuisine versus French cuisine (no offense :)
